Eggless Orange Pound Cake

Its been a long time that I posted any recipes.
After three years, I want to re-start with  a"sweet note".
My seven year old eats healthy foods. She loves soups, raw veggies and salads(Touchwood).Though she  occasionally craves for cookies and cakes, she stops after eating  a bite or two as they are "too sweet". This made me turn my attention towards making simple cakes .

I made this simple tea-time Orange cake which tasted heavenly and lighter on stomach.I would not claim this cake to be completely healthy but I can assure you that it is less sugary and has less calories . My family and friends loved this cake and was over in no time !


This post  is also for my friends and cousins who had asked me for the recipe and are now almost convinced that I forgot all about it.lol



Eggless Orange Pound Cake with No milk or Buttermilk:

Ingredients:

All-Purpose flour : 1.5 cups
Sugar : 1/2 cup
Baking soda : 3/4th- 1 teaspoon
Baking-powder : 1/2 tea-spoon
Unsalted Butter : 1/3rd cup (melt and cool)
Salt : pinch

Orange Juice : 1 cup

Orange Zest: 1-1.5 tea-spoon
Orange essence(Optional) : 1/4 tea-spoon
Small Orange pieces peeled, de-seeded and cut(Optional) : 4-5 

For the glaze:

Orange juice: 3/4 cup
Sugar : 1/2-3/4th cup

Topping:

Chocolate Orange Sauce (Very Optional)

NOTES:

1. Sugar quantity depends on how sweet you want the cake to be. This is Tea-time cake and is not a dessert. So I went a little less on sugar. But you could go upto 3/4th cup of sugar.


2.You might get a strong smell of baking soda if you add more. 


3.People use odorless cooking oil instead of butter. But the texture and taste came out better with unsalted butter


4.I prefer to add more orange zest for the aroma. But you could go for just one tea-spoon as well.


5. I got the Chocolate Orange Sauce from Whole foods.


6.Though I picked the basic recipe from Internet, I came up with my own measurements and ingredients after couple experiments.


Procedure:

1. Preheat the oven to 350 F.
2.Whisk all the dry ingredients - All-purpose flour, baking soda,baking powder,salt. Add the Orange zest and keep it aside. If you decided to add the orange pieces, you could do so now.
3.In another bowl, mix the sugar, butter and orange juice.Stir the mixture well. 
4.Grease the baking pan with oil or butter. I use parchment paper on top if it. But you could add flour on top of butter .
5.Now add the wet ingredients to the dry ones .Stir slowly. The mixture should not be too solid or too watery. Do not over-mix.
6.Pour the mixture into the baking pan. 
7.Bake for about 30 minutes. Test by inserting  a fork into the baked cake. Bake for few more minutes if the fork does not come out clean.

For the glaze:

1.Boil orange juice and add sugar
2.You could add orange essence ( I did not add orange essence)
3. Keep this aside and let it be warm.

When the cake is warm (Not hot) and is transferred to a plate, pour this warm glaze on top of the cake.Let it drip down the sides. Keep it in room temperature till everything cools off.

Refrigerate if it is not being consumed right away.

Yes,ChocolateSauce!!! Where and when can we use this?

As I said before this is a tea-time cake. Serve this warm by putting the piece of cake in the microwave for about 10 seconds. 
Melt the chocolate Sauce for 20 seconds and just pour on the piece of cake. 
Many people would like to consume the authentic orange cake with NO chocolate , hence I add it if someone wants it !

My kid Sriya loved it with chocolate sauce (like any other kid !) .So up to you:)
